Following #4, we need to:

• include telemetry dependency group in dev
• add tests for stac_fastapi/eodag/telemetry.py
• update opentelemetry-instrumentation-eodag in pyproject.toml to avoid having a reference to the github branch. This will block the upload to https://pypi.org/.
