xarray-dggs notebook

During the LPS @tinaok showed a notebook demonstrating xarray-dggs with EOPF sample data, could we port it to the sample notebooks?

I attempted to reproduce this notebook and encountered a few issues during the process. The compute step takes an extremely long time to finish. I tested both the conventional approach shown in the notebook and an alternative workflow using healpix_geo, but in both cases the execution runs indefinitely.

I have opened an issue (EOPF-DGGS/DGGS_examples#6) with Jean-Marc Delouis (IFREMER / EOPF-DGGS consortium), the author of the reference notebook (https://github.com/EOPF-DGGS/DGGS_examples/blob/main/notebooks/EOPF_UTM_to_HEALPixPSF_REGRID_ONE_TILE.ipynb), requesting updation.
