[cmake] get rid of `GLOB`s

Globbing considered harmful (in CMake, anyways). Usually what this does is add an extra step to the build process that can often take a very long time. This is really tedious to do though, but I'll leave this here as a reminder.

Okay, I can see why globbing was done here:

Regardless, some of the, er, smaller ones should not use GLOB if possible.

I'm in support of this, though indeed our tests are probably the one instance where GLOB is more useful than harmful.

(At the same time, generating 2 CMake targets per ASM tests results in a lot of IO thrashing and makes CI failure logs a pain to navigate. Would be nice if we found a way to prevent that, though GLOB is not the core issue here)
