Is this mod able to extract the json of commands sent by clicking an npc or clickable text in chat?

No, it can't. As far as I know, when you click a text with command in chat, it just sends the command text to the server, thus no JSON involved. If your intention is to extract that command text, I may investigate. If I'm missing or misunderstanding something, please let me know.
