BUG: doctest execution is stuck on hubble.rst

Something got introduced in/around #3367 and thus there are two parts of this bug

• fix the docs file/examples

• maybe add a timeout configurable to doctestplus (totally upstream and is tracked in ENH: add timeout option scientific-python/pytest-doctestplus#303)

Unfortunately all I see is that it's stuck, I didn't try to systematically go in and skip code blocks.
