Allow Custom Transactional ID in Iceberg Kafka Connect

Hi,
 We had the similar issue [https://github.com/apache/iceberg/issues/12352] - and need fix like   [https://github.com/apache/iceberg/pull/11780] . I have seen the fix in apache/iceberg module. Could you please fix asap?
