Cassandra Enhanced Sink: add the ability to configure StringCassandraSinkTask

Currently it is not possible to configure the classname that deals with raw string (JSON) values without schema.

We should allow the user to set the classname, possibly selecting it with a SELECT input in order to prevent typos
