Is your feature request related to a problem? Please describe.
The rationale behind this feature request (that we've been working on as well) is that when you have a lot of datasets, the UI gets rather overwhelming.

Describe the solution you'd like
Instead of bundling all endpoints and all api docs into a single endpoint, create a per-dataset endpoint.

Describe alternatives you've considered
Multiple instances of pygeoapi, but for our 300+ datasets, this is unfeasible.

We've already implemented this, and will reference a pull request soon.
