Add `TRACE` logs for JSON RPC responses

We suspect that certain RPC providers may be delivering inaccurate data for some of our Ethereum calls, particularly EpochManager.currentEpoch(). Having logs covering the requests and responses bodies will assist us in conducting a thorough investigation.
