Define Minimum Version for Kubernetes

It seems this chart tries to work even with antique 5+ year old Kubernetes clusters. I think it would make sense to stabilize at least on 1.19 (2021-10-28) or maybe even 1.24 (2023-07-28)? This would allow simpler and more predictable templates, encourage more contributors, and will allow a clear indication if someone needs an older chart because they would post an issue. Without this, it may be more difficult to make some changes because I for example have no clue if an old k8s would work with these settings (testing k8s templates is notoriously difficult)

Hi! I've no issue with an PR that stabilizes the helm chart for 1.24 and later. I wrote the template years ago and since then it just worked, so there was no need to ever adapt it.
