stripping symbols also removed defmt data

It appears that I am unable to strip compiled binaries without also getting rid of the defmt sections.

Error: Some uncategorized error occurred.

Caused by:
    0: Failed to parse defmt data
    1: `.defmt` section found, but no version symbol - check your linker configuration

defmt works by storing data in the symbol table. If you strip the symbol table out, it won't work.
