Provide List of logged Data

For documentation and data security purposes it would be very useful if you could add a list to the readme which data is contained inside the logs (logfiles, console-output or database) of the different containers. Especially person related data like pseudonyms, logins + timestamps, user activities, etc.

Edit: there is a list of logged items in confluence, but that only contains where patient related information is logged. We also need to know where employee related information is logged.
