Better encoder option handling

Would it be possible to have a way to control the encoder options.

Have a set of defaults but allow it to be overridden, custom and/or methods to toggle base options on/off.

Ie I want to be able to resize images but not strip metadata out of them.

ps. its a shame that at least metadata strip method is not in Intervention itself.
