I just used the provided docker-compose.yaml and ended up with this error, then the container quits. In case of docker run it keeps restarting

any idea?

Maybe not using root for any path that you mount into the container is useful.

From a re-investigation, this can definitely happen if /tmp is shared.
A change to https://github.com/selkies-project/docker-selkies-glx-desktop/blob/main/supervisord.conf, where changes to file=/tmp/supervisor.sock and serverurl=unix:///tmp/supervisor.sock might resolve the problem.
Is this Apptainer/Singularity?
