Automate deploy/vx.y.z tag creation on releases

Ideally it would be done by a workflow which:
- gets triggered by a regular `vx.y.z` tag creation
- makes a commit which updates the default image tag in deploy tool (such that it's not necessary to provide it twice at invocation)
- tags this commit with `deploy/vx.y.z`
