[terraform-ibm-vpc-private-path] Automate the VSI image hard coded in example

Hard coding an image like this is prone to break over time as images are deprecated ->

We either need to find another way to manage this, or create (update) automation to maintain it. We have automation for this exact thing running in landing zone VSI repos so maybe leverage that?
