update ext/extract_archiso.sh script for atomic moves

our ext/extract_archiso.sh script extracts the current ISO and deletes the old files. we should use symlinkes here, extract the new ISO, move the symlink, remove old files (maybe we also want to keep the last X versions?). this minimizes the timeframe where no image at all is available.
