Inference Extension: Support v1.0.1 Gateway API Inference Extension

The install guide uses v0.5.1 of Gateway API Inference Extension (GIE). Update the version to v1.0.1 or newer (v1.0.1 is the latest at the time of creating this issue). This is needed since InferencePool was promoted to GA in GIR v1.0.0.
