docs: mintlify migration updated

Note

Migrates and restructures documentation to a new Mintlify layout, adding key pages (User Guide, Tracing/Sessions/Projects/Metrics), self‑hosting and REST/SDK API references, styling, and updated links/assets.

• Docs Restructure (Mintlify):
  • New layout and navigation; many pages added/renamed; links and embeds updated.
  • Added: docs/user-guide, tracing how-tos (OTEL setup, sessions, projects, annotations), projects/metrics pages.
  • Self‑hosting: new overview, deployment (Docker/K8s/Helm/Railway), features (auth/email/management/provisioning).
  • API References: REST endpoints and SDK sections (Python/TypeScript) with OpenAPI-backed pages.
  • Styling/Assets: added docs/style.css, SVG/PNG assets; updated tutorial image URLs.
