Thanks a lot for doing some cleaning in that part. Only thing I added on top was to bring back mongodb 3.6 as I know some company relying on mongoengine are still using it and it's not adding much overhead in maintenance |

Add support for MongoDB 8.0 and newer Pymongo versions for testing. Drop obsolete versions of mongo, python and pymongo.
Also, I improved the helper shell scripts a bit.
