- Add symphony to remote_receiver dump list and add on_symphony trigger. - Add Symphony binary sensor config (data, nbits). - Add transmit_symphony action with command_repeats and example. - Note: single-frame decode; sender-native repetition to mirror IRremoteESP8266 (ir_Symphony.cpp). Addresses esphome/feature-requests#1633 (esphome/feature-requests#1633).

This PR documents the new Symphony IR protocol support in ESPHome:
